Kimchi 101 at the Queens County Farm Museum in Queens, New York.

Kimchi is a healthy & delicious traditional Korean staple that can accompany any meal. It is naturally fermented and made using a variety of produce, with the addition of aromatics, salt and seasonings. In this class, we will make two types of kimchi – the traditional spicy and a water kimchi. Participants will take part in each step of the process and learn that fermenting one's own foods can be quick and economical, makes use of excess produce, prevents food waste and allows easy access to healthy probiotics. Each participant brings home a small jar of each recipe that is made. (We will have jars, but encourage you to bring two of your own!)

Suin Park is the founder of forward ROOTS, a woman owned & operated company. Drawing on her own family history and cultural heritage, she has enjoyed working with fermented foods in the kitchen since her youth. Winner of a 2019 Good Food Award, recognizing social and environmental responsibility while celebrating craftsmanship and flavor, Suin's fermented kimchi sauce is a tribute to her own mother and draws on traditional Korean recipes. She strives to teach people that the art of fermenting foods at home can be easy, healthy and fun!
