Dark Chocolate Toffee Bars with Maldon Salt

Dessert. Who doesn’t love toffee bars? Dress this simple recipe up with dark chocolate and a sprinkle of Maldon salt. Timing is everything with this recipe so prep everything first so you can move steadily along. Make sure the saltines are already laid out on the cookie sheet before you even start the sugar/butter mixture. The best part is that you can easily freeze them and take out as needed.

Ingredients

  • Saltine crackers (any store-bought brand is fine—buy square or rectangular crackers)
  • 1 cup light or dark brown sugar, lightly packed
  • 1 cup salted butter
  • 12 ounces dark chocolate chips
  • Maldon or sea salt

Instructions

Preheat oven to 350°F. Line a 10- by 15-inch cookie sheet (that has an edge) with parchment paper. Completely line the cookie sheet with individual saltine crackers (break crackers to fit on end if necessary). In a heavy pot combine 1 cup brown sugar and 1 cup salted butter. Bring to a boil slowly. Hold a rolling boil for 2 minutes. Spread the mixture over crackers, completely covering them. Bake for 3–4 minutes and then remove from oven. Turn off the oven. Cover pan with chocolate chips. Return pan to oven for 1 to 2 minutes to melt. Remove from oven and spread chocolate to completely cover top. Sprinkle the salt evenly over the chocolate. Place in the refrigerator or freezer to chill. Break up in uneven pieces. Keep chilled.
