Ingredients
- 2 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 ribs celery, sliced
- 4 carrots, sliced
- 1 leek, white part thinly sliced
- 3 tablespoon tomato paste
- 1 can cannellini beans, or beans of choice
- 3 potatoes, roughly chopped
- 1 bay leaf
- 5 cups vegetable broth
- Salt and pepper to taste
- Spinach
- Any additional vegetables, such as turnips, broccoli, green beans, and herbs like thyme or parsley, optional
Instructions
Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent.
Add garlic and sauté for 1-2 minutes more.
Add celery, carrots, and leeks, and sauté for another 5-10 minutes.
Add in tomato paste and cannellini beans and toss to cover.
Add in potatoes, bay leaf, and broth.
Bring to a boil, and then simmer for 25 minutes.
Taste, add salt and pepper as needed.
Add in spinach, and then cook for another 10 minutes.
Taste again, adjust seasoning, and serve with fresh herbs.
